- 19oz black beans (540g can), drained
- 1 small red onion, diced
- 4 cloves garlic, crushed
- 3 tbsp tomato paste
- 3/4 tsp cumin
- 1/3 tsp chipotle powder
- 1/4 cup water
- Juice of 1.5 limes
- 1/3 cup fresh cilantro, chopped
- 1/3 cup feta cheese, crumbled
- 1 tbsp olive oil
- Salt to taste

Heat olive oil in a pan over medium heat. Add diced red onion and sauté until softened, 3-4 minutes.
