Ingredients

  • 19oz black beans (540g can), drained
  • 1 small red onion, diced
  • 4 cloves garlic, crushed
  • 3 tbsp tomato paste
  • 3/4 tsp cumin
  • 1/3 tsp chipotle powder
  • 1/4 cup water
  • Juice of 1.5 limes
  • 1/3 cup fresh cilantro, chopped
  • 1/3 cup feta cheese, crumbled
  • 1 tbsp olive oil
  • Salt to taste

Instructions

    Heat olive oil in a pan over medium heat. Add diced red onion and sauté until softened, 3-4 minutes.

    Add crushed garlic and cook for 1 minute until fragrant.

    Stir in tomato paste, cumin, and chipotle powder. Cook for 1 minute, stirring constantly.

    Add drained black beans and water. Stir to combine and bring to a simmer.
