    Preheat oven to 220C.

    Parboil potatoes in salted water for 8 minutes. Drain and steam dry 2 minutes.

    Shake potatoes in pot to rough up edges.

    Toss in fat and seasoning. Spread on a hot tray.

    Roast for 40-45 minutes, flipping halfway, until golden and crispy.
