Coconut Thai Chicken Meatballs
Thai-inspired chicken meatballs simmered in a rich coconut curry sauce.

Ingredients
- ground chicken
- spring onion, sliced
- clove garlic, crushed
- inch ginger, crushed
- chilli paste
- soy sauce
- egg
- coconut milk
- red Thai curry paste
- chicken stock
- Jasmine rice to serve
Instructions

Combine meatball ingredients and form into 12 balls.

Sear meatballs over medium-high heat for 2 minutes per side until browned. Remove and set aside.

Saute aromatics and curry paste for 4 minutes.

Add coconut milk and stock, bring to a simmer.

Return meatballs and simmer covered for 15 minutes.

Serve over jasmine rice.
