Baseline Meaty Tofu Marinade
A savory, umami-rich marinade with smoke and depth. Works as a baseline for batches of marinated tofu, tempeh, seitan, or mushrooms. Takes 30+ minutes to develop flavor.

1 block (350g) tofu
Ingredients
- 350g firm tofu, cubed
- 4 tbsp soy sauce
- 1 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp liquid smoke
- ½ tsp black pepper

Combine soy sauce, Worcestershire sauce, tomato paste, olive oil, garlic powder, onion powder, liquid smoke, and black pepper in a bowl.

Cut tofu into cubes and add to marinade, gently stirring to coat all pieces.

Refrigerate for a minimum of 30 minutes. Longer marination (2+ hours) develops deeper flavor.
