Smoky Mustard BBQ Black Beans

Ingredients
- 1 small red onion, minced (1/4" or smaller, about 150g)
- 3 cloves garlic, minced
- 3 tbsp tomato paste (45g)
- 2 tbsp yellow mustard (30g)
- 1 tbsp Dijon mustard (15g)
- 2 tbsp maple syrup (40g)
- 1 tbsp brown sugar (12g)
- 1.5 tbsp white vinegar (22ml)
- 1 tbsp Worcestershire sauce (15ml)
- 1/2 tsp liquid smoke
- 1 chipotle in adobo, minced, plus 1 tsp adobo sauce
- 3/4 tsp salt
- 1/4 tsp black pepper
- 14 oz (400g) cooked black beans, drained and rinsed
- 1/2 cup water (120ml)

Heat a medium saucepan over medium heat. Add a small amount of oil if needed, then sauté red onion for 3-4 minutes until softened.

Add garlic and sauté for 1 minute until fragrant.

Add tomato paste and minced chipotles and cook for 1-2 minutes, stirring frequently, to deepen flavor.

In a small bowl, whisk together maple syrup, brown sugar, white vinegar, Worcestershire, liquid smoke, salt, and black pepper. Add to the pan and stir well, scraping up any fond from the onions to deglaze.

Add black beans and stir to coat in sauce.

Add water and mustards, stir to combine. Reduce heat to medium-low and simmer uncovered for 10-15 minutes, stirring occasionally, until sauce has thickened to desired consistency and beans are desired texture.

Taste and adjust seasoning - add more chipotle for heat, vinegar for tang, maple syrup for sweetness, or salt as needed.
